Einkorn is the original, un-hybridized wheat, boasting a unique nutritional profile and a delightful taste that modern wheat can’t match. Jovial is a trusted brand, being grown exclusively in Italy. 

Gluten Sensitivity:     Many individuals with non-celiac gluten sensitivity find they can tolerate einkorn bread better than modern wheat varieties. This is attributed to einkorn’s simpler genetic structure (only 14 chromosomes compared to modern wheat’s 42) and the nature of its gluten proteins, which are weaker and more easily broken down during the long sourdough fermentation process.  Einkorn is still a form of wheat and is NOT gluten-free.
