The 40% whole wheat loaf features 40% of freshly milled whole organic wheat berries for added fiber, nutrients,  and earthy notes, complimented by a versatile unbleached flour for that classic soft crumb. The sourdough starter is infused with earthy rye for a complex, tangy finish. This loaf offers a heartier, flavorful bite than the standard white sourdough but still remains beautifully light and tender, boasting a satisfying chew, a crisp golden crust, with an open, airy interior.  The 75% blend offers a more of a denser loaf while still giving the loaf a bit more oven spring. The 100% is for the die-hard no frills customers who want to get all the nutrients they can out of their loaf. This is the most dense and hearty of the loaves but also the most nutrient packed.
