Description:         Einkorn is an ancient grain that offers a rich, nutty flavor and tender crumb. This loaf is made from freshly milled einkorn berries. Freshly milled berries offers the most nutrient-packed bread. Einkorn is the original, un-hybridized wheat, boasting a unique nutritional profile and a delightful taste that modern wheat can’t match.  Einkorn is naturally low in gluten, rich in protein, antioxidants, and essential nutrients, and easier to digest.  

Gluten Sensitivity:     Many individuals with non-celiac gluten sensitivity find they can tolerate einkorn bread better than modern wheat varieties. This is attributed to einkorn’s simpler genetic structure (only 14 chromosomes compared to modern wheat’s 42) and the nature of its gluten proteins, which are weaker and more easily broken down during the long sourdough fermentation process.  Einkorn is still a form of wheat and is NOT gluten-free.
